Executive Chef DoubleTree by Hilton Guwahati Job Overview
As Executive Chef, you will be responsible for managing and leading the entire culinary operation of the hotel. This includes overseeing multiple kitchens (Main Kitchen, Chinese Kitchen, Pastry, Executive Club Lounge, etc.) and ensuring that all food production meets Hilton’s global standards of quality, presentation, and consistency.
You will work closely with the Food & Beverage team to create exceptional dining experiences while controlling costs and driving innovation in menus.
Key Responsibilities
- Oversee all culinary operations including restaurants, banquets, pastry, and stewarding
- Plan, prepare, and implement high-quality food and beverage products
- Work with recipes, standards, and plating guides to ensure consistency
- Maintain strict HACCP and food safety standards across the kitchen
- Develop new dishes for menus, food tastings, and promotions
- Control food costs, inventory, and wastage
- Train, mentor, and develop the culinary team
- Conduct regular kitchen briefings and team meetings
- Ensure proper hygiene, sanitation, and maintenance of all kitchen equipment
- Collaborate with F&B Manager and other departments for smooth operations
- Participate in menu planning and seasonal concept changes
- Monitor productivity and optimize kitchen processes
- Handle guest feedback and special requests professionally
Eligibility & Requirements
Experience:
- 10–15 years as Head of Kitchen in a 4/5-star category hotel
- At least 8 years of experience as a Main Chef (Executive Chef / Head Chef level)
Education:
- High School diploma or equivalent (formal culinary education or major in cooking is advantageous)
Key Skills:
- Strong leadership and team management skills
- Excellent knowledge of international and Indian cuisine
- Up-to-date with sanitation and food safety practices
- Valid health certificate
- Good command of English (verbal and written)
- Ability to work under pressure and handle busy periods
